Last night was Key Lime Pie and this was out of the ballpark good! P declared it the best pie so far but we know what that means...it's the current pie he is eating at the moment. Brian declared this one a great hit...up among his top three and had another piece after school today. Aaron was more excited about the whipped cream on top but it was a BIG HIT! Again from Sweetie-licious; a nice creamy texture with the tang/tart of the limes in a graham cracker crust. We will definitely be making this one again and again!

Week 11: Banana Cream Pie
Banana Cream Pie and I was skeptical but it was yummy! The boys weren't quite as convinced...each ate some and I think JP liked it enough but P and I really liked it...creamy and delicious. It was another one from Sweetie-licious pies...if you haven't figured out for yourselves, she is one mean pie-maker...all of her recipes have been big hits around here. The pie had a layer of sliced bananas, then a creamy custard including banana extract (I was worried it would be too fake banana-y) and then whipped cream on top and Wow!

Week 10: Creamy Caramel Cashew Pie
Oh, this pie was heaven! Another winner from the Sweetie-licious Pie cookbook. This was heavenly...hard to describe but oh, so delicious...warm, caramely, butterscotchy, cashewy (I know, not real words). We drizzled additional caramel on top and ate it warm...delicious. I swapped buttershots liqueur for butterscotch extract and probably added more than the recipe said, but it was yummy. Boys were a no go...think the texture of chopped nuts in there threw them off but the grown-ups loved. This is probably in my top two or three so far...absolutely wonderful!
Week 9: Chocolate Cream Pie
Finally, a Chocolate Cream Pie...delicious. We had this one sat night as dad was heading out of town and the entire pie was gone by Sunday post lunch. The boys thought this was maybe the best...it's up for debate with the ice cream pie. B is even thinking about this for his birthday dessert! It was yummy...not too rich but a good mix of chocolate and cream. The original recipe said a graham or a cookie crust but I'm glad I did a traditional pie crust...all in all, a great combination!
Here is the recipe: http://allrecipes.com/recipe/chocolate-cream-pie-ii/. A few tweaks after reading reviews and looking at other similar recipes...we did 1/4 cup cornstarch and 4 yolks. Then after putting chocolate in the pie shell, cover with saran wrap right on top of chocolate so as cools a skin doesn't form. Once nice and chilled, cover with whipped cream (i used real whipping cream, not the frozen stuff). Highly recommend this pie!

Week 8: Peanut Butter Cup Pie
This week's was a yummy, smooth peanut butter cup pie. The original recipe was just for the peanut butter part but then we added some fudge to the top before putting the whole thing in the freezer. Pretty yummy! Recipe said to let it sit 15 min out of the freezer before eating but we dug right in...pretty good from the freezer. Boys weren't quite as keen and P liked it better than me. I wanted basically straight peanut butter as I like to eat it from the jar but he liked that it had cream cheese mixed with the peanut butter.
