Week 14: S'mores Pie

I opted for an easy, simple pie this week as we were in the midst of birthdays, spring break and traveling.  This was a yummy, easy pie with only one minor mishap.  It's a S'mores Pie, so think of a campfire s'more and that's what it is.  Graham cracker crust, chocolate pudding filling and then broiled marshmallows on top.  Sounds easy and yummy and it was but you have to be VERY careful while broiling the marshmallows on top.  For ease, I just used instant chocolate pudding but it would probably be even yummier with homemade chocolate filling.  The pie is refrigerated for a few hours and then just before serving, you put the marshmallows on top and broil for a couple of minutes letting the marshmallows brown.  Watch the pie very closely and make sure the rack is not too high as the marshmallows puff up.  I was not watching ours close enough and as it puffed up, it hit the broiling heating element and caught on fire...our pie was literally on fire.  Thanks to quick thinking of Uncle Nate and P, the pie was rescued, an oven fire was averted and we still ate the pie...after scraping off all the charred marshmallows and adding a few new ones.  Not as pretty as I had hoped, but still yummy and it had that real campfire taste!  Kids and adults all thought it was pretty yummy and there were no leftovers!



Week 13: Lemon Meringue Pie

Week 13 was Lemon Meringue Pie from the Sweetie-licious Pie Cookbook.  It felt like a little of a cheat as I just made it last Christmas for P but it was tasty yet again and we all enjoyed this one.  Grandma was here to eat with us...she was a little less enthusiastic about it as she said she preferred coconut cream or banana cream to lemon meringue but she still thought it was good.  This is a great recipe...nice and lemony and tart.
